Just curious, my project seems to track cookies of some kind? I have not implemented these myself, is this a feature of the engine or?

I think that may be analytics from the PlayCanvas editor, if you are observing them on Launch. @yaustar may know more on this.

Which page(s) are you referring to? We do have analytics and cookie consents on our domain that may or may not been accepted?
The engine itself does not use cookies

Yes, metrics.js, grahpene and sentry are all metrics/analytics related. consent is the cookies consent popup/control
The rest are Editor features/needed files.
