Is there any chance you could add an option for “Fold All” and assign a shortcut key to it? And while you’re messing around with that, assign shortcut keys to Fold and Unfold as well.
Also, looking at the CodeMirror features, it also supports Vim mode. It would be nice you could make that optionally available as well.
