I rebooted into Windows 10 and installed a portable copy of 78.1. Much smoother, though again still dropping a couple of frames unlike Chrome.
Interestingly, running it in Chrome and Firefox 78 at the same time results in the same juddering redraw as Firefox 79 in both browsers. However, running it in two tabs within Firefox 78 is perfectly fine.
